Made with 55% almonds, hazelnuts and cocoa nibs, the grainy texture of Cocoa Nib Praline is ideal for your typical cocoa-based creations. This promises to lift even the most basic crème pâtissière.
Technical characteristic
The making of old-style praline: an ancestral know-how that is passed on from generation to generation.
The whole and sized dried fruits are selected with the greatest care. The important thing for the CLUIZEL Manufacture is not a particular origin of these dried fruits, but their aromatic potential.
Dried fruits and sugar are cooked over naked heat and set to the point of caramel in large red copper pots.
During cooking, a constant mixing is carried out in order to guarantee a homogeneous development of flavors. It is the duration of the cooking that will give the fruity or toasted intensity notes to the final recipe. The experience of our confectioners allows them to perfectly master the cooking for each of our recipes.
Once the cooking is finished, the mixture is spread on large metal plates. This allows it to cool slowly, without artificial technique so as not to bring moisture on the sugar
At this stage, the caramel of the praline being very hard, we have chosen to grind it in a traditional granite wheel. For the finest pralines, a second grinding step is
necessary.
